Spring/Summer means fiddlehead time. I have to eat these things at least once a year. Vic's always has the best produce and they had them so I had to get them. There were also some fresh local tomatoes so it was time for a nice fresh pasta dish. Here is linguini with a fresh spicy tomato sauce, fiddleheads and veggie chicken.
This little guy is easy to create. Get some water boiling for your pasta. Sautee the veggie chicken and then let it rest before slicing it up. Dice a small onion and a jalapeno and sautee them till they are soft. Then add some fiddleheads and continue cooking for a couple minutes. Add a clove of finely diced garlic and cook for another minute. Then add one good sized fresh tomato that has been diced. Add some fresh or dried basil, oregano, thyme and the cut up veggie chicken and let it simmer for a while. Use some of the pasta water to thin it out and help it cook. Use olive oil for your sauteeing and enjoy your meal. Just that easy.
On a side note, I missed the event that would have been my 100th post. Kinda funny that it was basically a ridiculous chocolate bar and a classic vanity plate. Thanks for tuning in and caring.
